Heat is the enemy of aroma Spices like cardamom, cloves and cinnamon carry their fragrance in natural oils. High-speed factory grinders heat spices as they crush them, and much of that oil escapes before the powder is even packed. At Baapuji, whole spices are gently roasted in small batches in an iron kadhai, cooled, then pounded by hand in a stone okhli. Slower, yes. But the oils stay in the masala, and later, in your food.
