Long before hybrid wheat filled every flour mill, many Indian villages grew khapli, also known as emmer wheat. It is one of the oldest cultivated wheats, with a hard husk, a deep golden grain and a nutty, earthy flavour. Over the decades it slowly disappeared from city kitchens. Today, Baapuji Organic Bazaar is bringing it back.
From field to chakki Our Khapli grain comes directly from partner farmers who grow it without chemical sprays. After harvest the grain is dehusked, cleaned by hand and slow ground on a stone chakki. Stone grinding runs cooler than high-speed roller mills, so the bran and germ stay in the flour along with that fresh village aroma. We mill in small batches and pack within days, so what reaches you is fresh atta, not warehouse flour.
How it cooks Khapli atta absorbs a little more water than regular atta, so knead it slightly softer and rest the dough for 15 to 20 minutes. The rotis puff well on a hot tawa and stay soft even after they cool. It also works beautifully in parathas, thepla, puris and atta laddoos, where its nutty taste really shines.
