Why ingredients matter Kheer has only a few ingredients, so there is nowhere to hide. Aromatic organic rice cooks soft and creamy. Real desi ghee adds warmth and fragrance. Almonds, cashews and raisins bring texture. When each of these comes from farmers and village artisans rather than a factory line, the kheer tastes like childhood.
A simple village-style method 1. Wash 1/4 cup organic rice and soak for 30 minutes. 2. Roast the rice lightly in a spoon of desi ghee until fragrant. 3. Add it to 1 litre of full-cream milk and simmer on low heat, stirring often, for 40 to 45 minutes. 4. Sweeten to taste, add chopped dry fruits and a pinch of cardamom. 5. Cool it, cover with a thin cloth and set it in the moonlight for a few hours before serving.
