In many Indian homes, summer and autumn once meant the same ritual. Raw mangoes were cut on the verandah, spices were ground on stone, and ceramic barnis sat on the rooftop soaking up sunlight for weeks. The pickle that came out was sharp, fragrant and alive with flavour. Most store pickles today skip that patience, using vinegar, cheap refined oils and preservatives to rush the process.
At Baapuji Organic Bazaar, we still do it the old way. Our Aam ka Achaar is made by women from farming families in small batches. Raw mangoes are cut by hand, mixed with fennel, fenugreek, kalonji, turmeric and red chilli, and matured in cold-pressed mustard oil under the sun. Mustard oil does more than preserve; its natural pungency is what gives a village pickle its signature bite.
Our Nimbu ka Achaar follows the same slow path. Whole lemons are salted and spiced, then left to soften in the sun until the peel turns tender and the tang mellows into something deeper. No vinegar, no shortcuts.
