In Indian villages, the arrival of the kharif harvest is a quiet celebration. Moong and urad pods are dried in courtyards, beaten gently, and winnowed in bamboo soops until only clean grain remains. That first dal of the season, cooked slowly in a clay handi, has a nutty aroma most city kitchens have never tasted.
What polishing takes away Much of the dal sold in shops is polished - buffed with water, oil or other coatings so it looks shiny and uniform. It looks attractive on a shelf, but the process strips away part of the outer layer and changes how the dal cooks and tastes. Unpolished dal looks slightly dull and uneven. That is exactly how real dal should look.
Our harvest, your kitchen At Baapuji Organic Bazaar, our dals come directly from farmer families. After harvest, the grain is sun-dried, hand-cleaned and packed without any polish. This season's lot includes yellow moong, whole and chilka moong, black urad, desi arhar, masoor and chana dal.

Simple tips for fresh dal Soak whole dals for a few hours before cooking; they turn softer and easier to digest. Fresh-harvest dal usually cooks a little quicker, so check it earlier than usual. Store it in airtight steel or clay containers, away from moisture, and add a few dried neem leaves the way our grandmothers did.
Why now Fresh dal is at its best right after harvest, and this lot is limited to what our farmers brought in this season. When it's gone, it's gone until next year.
